Decadent Walleye/Bacon/Wild Rice/Cream Soup

This is a delicious artery-clogging, stroke-inducing soup/chowder that just begs to be modified to your individual taste!! Substitute freely to suit your taste and serve with crusty bread!!!!

1 Medium Onion
1 Carrot
1 Stalk Celery Diced
½ Cup Butter
½ Cup Flour
1-½ Cups Water
3 Cups Chicken Stock
¾ Cup Diced Bacon, Ham or Canadian bacon
Walleye fillets cut in small chunks
1-1/2 Cups Cooked Wild Rice
1 Cup Shredded Cheddar Cheese
2 Cups ½ & ½ Cream
Salt & Pepper to Taste
Hot Sauce


Sauté onions, carrot and celery in butter until onion is clear, add flour, cook 3-5 minutes
Using a wire whip blend in water and stock
Bring to a boil stirring constantly
Reduce heat add remaining ingredients and simmer for 20 minutes
Makes 10 servings
